One Tray Bake the whole family will enjoy

You can't beat a beautiful Autumn day in New Zealand. (Mostly) clear blue skies, bright sun, and a crispness in the air that promises the lighting of fires and the donning of warm wooly jumpers. Autumn also brings with it the onset of cooler weather, giving us the perfect excuse to tuck into easy to make, yummy dinners the whole family will enjoy. 

For the time-poor among us, Jamie Oliver's One Tray Bake is, in his words, "so easy - chuck everything in one tray then bung it in the oven." We couldn't have said it better ourselves and guarantee many happy bellies around the dining table. Scroll down for the recipe..

Ingredients

  • 1 bunch of fresh basil
  • 1 bulb of garlic
  • 1 handful of de-stoned black olives
  • 1 small ciabatta loaf
  • 8 free-range chicken thighs (bone in) or drumsticks
  • 2 handfuls of cherry tomatoes
  • olive oil, salt, pepper 
  • 1 dried red chilli
  • 8 rashers thin-sliced smoked streaky bacon

Method

  • Preheat the oven to 180 degrees celcius. Grab your deep roasting dish, big enough to fit all the chicken in one layer.
  • Pick the basil leaves, break the bulb of garlic into cloves, then add the olives.
  • Rip the ciabatta into medium-sized chunks and place in the tray with the chicken, tomatoes, basil leaves, unpeeled garlic cloves and olives. Add a generous drizzle of oil, a pinch of salt, black pepper and the chilli.
  • Toss to mix up well, then reposition the chicken on top. Bake in the oven, turning the chicken after 30 minutes.
  • After another 30 minutes, drape the bacon on top of the chicken and return to the oven for 15 minutes, until the chicken is cooked and falling off the bone.
  • Serve with a lovely crisp green salad and enjoy!
